INGREDIENTS
8 pods fresh okra
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tomato, cored and cubed
1 onion, diced
Salt to taste
PREPARATION
- Preheat oven to 350˚
- Place okra on a cookie sheet, drizzle with olive oil, and bake in oven until tender to a fork.
- Combine the vinegar, tomato, onion, and salt in a bowl and set aside.
- Toss the okra with the tomato mixture and serve. Serves 2–4.
