4 carrots, peeled and diced
1/2 medium onion, diced
1/2 stalk celery, diced
1 apple, peeled and diced
2 tablespoons vegetable oil
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
A pinch of nutmeg
2 cups broth (vegetable or chicken)
1/4 cup sour cream
1 tablespoon finely chopped mint
- Heat oil in a medium saucepan. Add carrots, onion, celery, and apple. Sauté until soft, about 5 minutes.
- Add salt, pepper, cinnamon, ginger, and nutmeg. Sauté for 1 minute.
- Add broth, bring to a boil, reduce heat, and simmer for 20 minutes, until vegetables and apple are very soft.
- Puree in a blender or with a hand blender. Serve with a dollop of sour cream sprinkled with mint.
Serves 4. Prep time: 20 minutes; cooking time: 30 minutes.
