1 grapefruit, peeled and sectioned
1 kiwi, peeled and cut into 1/4-inch slices
2 cups lettuce, torn or chopped into bite-sized pieces
2 tablespoons olive oil or any nut oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
2 tablespoons coarsely chopped nuts, e.g., walnuts or almonds (optional)
- Toss together grapefruit, kiwi, and lettuce
- Whisk together oil, vinegar, mustard, and honey (if using).
- Divide salad onto 2 chilled plates, and drizzle desired amount of dressing over each salad.
- Top with nuts (if using).
Serves 2. Prep time, 15–20 minutes.
