3–4 cups freshly grated carrots
1 large apple (or 2 small), cored and chopped
1/2 cup raisins
1/4 cup mayonnaise or vegenaise
1/4 cup walnuts, chopped (optional)
- Combine all ingredients in a medium sized bowl and stir.
- Add more mayo/vegenaise as needed.
Serves 2–3. Prep time, 5–10 minutes.
Cook’s note: This recipe may be adapted to a variety of tastes and whatever produce you have on hand. Try oil and vinegar in place of mayo; add 1 cup of any or all of the following (diced, shredded, or very thinly sliced, your preference): raw parsnips, fresh fennel bulb, jicama, cabbage, red bell pepper, cucumber, and/or radishes.
