- Preheat oven to 425°F; wipe chestnuts clean with a damp towel.
- Carefully cut a large “X” into the flat side of each chestnut with a paring knife or chestnut knife—cut through the shell but not the nut meat.
- Bake X-side up in a shallow baking pan for about 20–30 mins or until shells burst and chestnut is golden brown. Shake every 10 mins or so for even roasting.
- Peel when just cool enough to touch (remove outer shell and inner membrane).
