Braised Carnival Squash

INGREDIENTS

1 large carnival squash
1 tablespoon extra virgin olive oil
1 ¼ cups water
¼ small red onion, diced
3 cloves of garlic, minced
1 teaspoon paprika
1 teaspoon coarse sea salt
Pinch of ground pepper

PREPARATION

  • Cut squash in half, microwave in a bowl with ¼ cup water for 3 minutes.
  • Remove peel, and cut into 1-inch pieces.
  • Heat olive oil in a sauté pan on medium-high heat, and add onion, garlic, paprika, salt and pepper. Sauté for 2–3 minutes, add cubed squash, and pour in remaining cup of water.
  • Sauté until water has evaporated and squash is soft (about 10 minutes). If the water evaporates but the squash still isn’t fully cooked, just add another . cup until it’s done.
  • Remove from heat, let cool, and serve.
