Cabbage and Apple Slaw

INGREDIENTS

4 cups shredded cabbage
1 large unpeeled apple, cored,
quartered, and thinly sliced
½ cup mayonnaise (more or less to taste)
¼ cup sour cream (more or less to taste)
2 tablespoons cider vinegar
½ teaspoon celery seed
½ teaspoon kosher salt
1/8 teaspoon black pepper
½ cup red onion, very thinly sliced or minced (optional)
2 tablespoons finely chopped fresh flat-leaf parsley (optional)

PREPARATION

  • Put shredded cabbage in a large bowl and set aside.
  • In a medium bowl, whisk together mayonnaise, sour cream, vinegar, celery seed, salt, and pepper.  After dressing is combined, add apple slices and red onion (if using).
  • Pour mixture over shredded cabbage and toss gently until coated.  Cover and chill 1 hour or longer.
  • To serve, spoon into salad bowls and sprinkle with chopped parsley (if desired).

Serves 4–6 as a side dish. Prep time,  15 minutes; chill time,  1 hour or more.
