Roasted beets may be served hot or cold. 
They’re delicious sliced in salads,
combined with other root veggies, or pureed for soups
1. Heat oven to 375°F.
2. Rinse beets well and trim off any leafy tops.
3. Wrap beets in foil and place on middle rack in oven.
4. Roast until tender and easily pierced with a knife (about 1 hour); remove from oven.
5. When beets are cool enough to handle, peel using a paring knife or by pushing off the skin with your fingers.
