Roasted Garlic Mashed Potatoes

INGREDIENTS

3 cups potatoes, in about 1-inch dice
4 cloves of garlic (more or less to taste), peeled but left whole
3 tablespoons olive or other vegetable oil
½ teaspoon salt
¼ teaspoon pepper
¼ cup milk or cream, heated
Butter to taste (optional)

PREPARATION

  • Preheat oven to 375°F.
  • Toss potatoes and garlic with oil, salt, and pepper, and place on a rimmed baking sheet.
  • Roast until potatoes are soft, about 30 minutes.
  • Place in a bowl, add half of the milk/cream (and butter if using), and mash with a potato masher until desired consistency is reached.
  • If potatoes seem dry, add a bit more milk/cream. Add more salt and pepper to taste.

Serves 4. Prep time, 15 minutes; cook time, 30–35 minutes.

Cook’s note: You can replace milk/cream with buttermilk, sour cream, or yogurt.
