- Sort beans, discard discolored/shriveled beans and any foreign matter, and rinse.
- Bring 1 cup beans and 5 cups water to a boil for 3 minutes, remove from heat, cover, and leave to soak overnight.
To Cook:
- Drain, rinse, and return beans to pot, adding 3 cups of water for each cup of soaked beans.
- Bring to a boil, reduce heat, and simmer uncovered until tender, 45 to 90 minutes, checking periodically.
- When done, drain and use in salads, soups, and other recipes.
