INGREDIENTS
1 to 2 tablespoons olive oil
3 stalks green garlic (green and white parts), chopped
Salt to taste
2 slices prosciutto, sliced (optional)
1 bunch collard greens, thinly chopped
Freshly ground black pepper (optional)
Fresh lemon juice (optional)
PREPARATION
- Heat oil over medium heat, add green garlic and sauté until bright green and slightly soft.
- Add prosciutto, if using, and cook, stirring, about 1 minute.
- Add greens and 1/4 cup water and stir.
- Cook until greens are wilted and tender
