INGREDIENTS
1 cup raw turnips, peeled and grated
1 cup apple, grated (peel is optional)
1/2 cup microgreens, separated
Juice of 1 large lemon
1 tablespoon olive oil
1 teaspoon honey or agave nectar (optional)
Salt and pepper to taste
PREPARATION
- Combine all ingredients. Toss well and chill, covered, in the refrigerator.
Serves 3–4 as a side salad. Prep time, 10 minutes.
