1. GUACAMOLE
INGREDIENTS
1 avocado, sliced into cubes and removed from the skin
1/4 cup onion (white, yellow, red, or green), finely chopped
1 small tomato, diced (optional)
1/2 teaspoon cumin
1/2 teaspoon salt
1–2 teaspoons olive oil
1–2 teaspoons fresh lime or lemon juice (optional)
PREPARATION
- In a large bowl, mash avocado until chunky or creamy, depending on preference.
- Stir in onion, tomato, spices, oil, and juice, and stir or mash until desired consistency is reached. (Serves 2–4.)
Cook’s note: Serve with tortilla chips, on potato skins, or with any number of Mexican dishes.
2. AVOCADO & EGG SPREAD
INGREDIENTS
1 avocado, sliced in half and removed from the skin
2 hard-boiled eggs
1/2 teaspoon salt
PREPARATION
- Place all ingredients in a bowl and mash well with a fork.
- Serve on toasted bread. (Serves 2.)
3. AVOCADO SMOOTHIE
INGREDIENTS
1 avocado, sliced in half and removed from the skin
1 banana, sliced
1/2 cup milk (regular, almond, or rice)
1/2 teaspoon honey
3–5 ice cubes
PREPARATION
- Put all ingredients in a blender or food processor and blend until ice cubes are completely crushed. (Serves 2.)
