Cucumber Corn Salad

INGREDIENTS
1 cup fresh corn kernels, cut from the cob
1 cup cucumber, coarsely chopped
1/2 cup carrot, grated
1/4 cup scallions, finely chopped
1/4 cup fresh mint leaves, chopped (optional)

Dressing:
2 tablespoons vegetable oil
1 tablespoon apple cider vinegar
1 teaspoon sugar (white or brown), honey, or agave (optional)
A pinch of celery seed
A pinch of cayenne pepper or dry mustard (optional)
Salt and pepper to taste

PREPARATION

  • Whisk together dressing ingredients until emulsified and sugar (if using) is dissolved.
  • Combine veggie ingredients in a bowl, drizzle on desired amount of dressing, and toss until lightly coated. Add salt and pepper to taste.
  • If possible, let chill 30 minutes, stir and serve, garnished with fresh mint.

Serves 2–3. Prep time, 10–15 minutes; chill time, 30 minutes.
