Caramelized Stone Fruit Crostini

Adapted from a recipe by Tanya Milosevich

INGREDIENTS
3–5 plums, peaches, and/or nectarines, cut in quarters, stones removed
Juice of one orange
2–3 tablespoons regular or lavender sugar
1 medium baguette, diagonally sliced, lightly toasted
8–15 oz. fresh ricotta or goat cheese to spread

PREPARATION

  • Put juice and sugar in a pan and heat on medium until sugar is dissolved.
  • Increase heat to medium-high, add sliced fruit to pan, and sauté until tender and lightly caramelized (3–7 minutes depending on size of slices), then remove from heat.
  • Spread ricotta or goat cheese on the toasted bread.
  • Spoon the stone fruit on top of the cheese, and serve.

Serves 2–4. Prep time, 10 minutes; cook time, 5–10 minutes.

Cook’s note: Amount of cheese depends on quantity/size of baguette slices and cheese-to-bread ratio preference. Experiment and have fun!
