2–3 tomatillos, de-husked, washed, and diced
1 medium tomato, de-seeded and diced (about 1/2–3/4 cup)
1–2 tablespoons onion, finely chopped
1 clove garlic, minced
1 tablespoon lime juice
Salt and pepper to taste
1–2 tablespoons banana pepper (or other mild chili pepper), finely chopped (optional)
1 teaspoon jalapeño pepper (or other hot pepper), minced (optional)
- Mix ingredients together (by hand for chunky salsa, or pulsed in a food processor to desired consistency), and add salt and pepper to taste.
- For mild salsa, omit jalapeño pepper. For spicier salsa, increase amount of jalapeño or other hot pepper.
Cook’s note: Recipe may be doubled and tomatillo-to-tomato ratio varied. If using hot peppers, the seeds are the hottest part, so remove or keep them depending on your desired level of spicy.
