1 cup heirloom tomatoes, chopped in bite-size pieces
1 cup cucumber, chopped in bite-size pieces (cuke peel is optional)
1/2 cup sweet bell pepper, diced
1/4 cup fresh basil leaves, chopped
Salt and pepper to taste
1/4 cup crumbled feta cheese (optional)
- Toss salad ingredients together and drizzle lightly with NaGo Miso Dressing; olive oil and balsamic or red wine vinegar; or your dressing of choice.
Serves 2–3. Prep time, 10 minutes.
