2 tablespoons olive oil
1/4 cup onion, in 1/4-inch dice
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups cauliflower florets, cut into bite-size chunks
Pinch of red pepper flakes
2 cups hearty greens (kale, chard, collards, mature spinach, etc.), washed well, stems removed, coarsely chopped
1 tablespoon red wine vinegar or balsamic vinegar
- Heat oil in a medium skillet over medium high heat.Add onion, garlic, salt, and pepper and cook for 1 minute.
- Add cauliflower and cook until browned, stirring frequently, about 6–8 minutes.
- Add greens, red pepper flakes and vinegar and cook until greens are wilted, about 3 minutes.
- Serves 2. Prep time, 10 minutes; cook time, 10–12 minutes.
