Jerusalem Artichoke

sunchoke_lgThe Jerusalem Artichoke is the tuber from a very tall sunflower-like plant. that originated in North America and looks a bit like ginger root. If a Jerusalem Artichoke could talk, it might lament. Often misunderstood and overlooked, the Jerusalem Artichoke is mild and actually quite easy to cook, and goes with everything. Its peel can also be eaten, as it is thin and nutritious.

Preparation Tips

Like potatoes, they can be be peeled or not and are quite versatile.  It is generally cooked but can be eaten raw. Scrub well in water before use.

Storage Tips

Store in a cool, dry place away from light from 1–3 weeks.
