Roasted Cauliflower “Croutons”

2 cups cauliflower florets, cut into bite-size pieces
1 tablespoon olive oil
¼ teaspoon salt
Pinch or 2 of pepper


  • Preheat oven to 425 °F.
  • Toss cauliflower with oil, salt, and pepper.
  • Place on rimmed baking sheet and roast until lightly browned, about 15 minutes.
  • Sprinkle over pasta, salads, or whatever sounds good.

Yields 2 cups. Prep time, 5 minutes; cook time, about 15 minutes.
