2 apples, quartered and cored with skin on
1/2 cup sweet pepper (stems and seeds removed), finely chopped
1 tablespoon red, white, or green onion, minced
2 tablespoons lime, lemon, or orange juice
2 tablespoons cider vinegar
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon honey or agave nectar (optional)
Cilantro or parsley, finely chopped (optional)
- Grate apples with the largest slots on a box grater or food processor and immediately toss with citrus juice.
- Mix in peppers and onion.
- In a bowl, whisk together the rest of the ingredients and toss with the apple, pepper, and onion mixture.
Serves 2. Prep time, 10 minutes.
