2 apples, peeled and cut into 1-inch chunks
2 pears, cut into 1-inch chunks
2 tablespoons lemon juice
1 tablespoon vegetable oil
1 tablespoon brown sugar (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
- Heat oven to 425 °F.
- Toss all ingredients together and place on a rimmed cookie sheet.
- Roast in the oven until fruit begins to brown and is just knife tender, about 15–20 minutes.
- Place fruit in a bowl and mash with a potato masher, or pulse in a food processor to desired consistency.
Serves 2–3. Prep time, 10 minutes; cook time, 20 minutes.
Cook’s note: You can serve this warm as a side dish or condiment, or serve with ice cream or pound cake for dessert.
