2 pomelo fruit
2 kiwi, peeled and sliced
⅔ cup roasted cashews
2 tablespoons honey
1 tablespoon lime juice
2 tablespoons fresh mint leaves
1 teaspoon lime zest
- Peel the pomelos, separate the segments, trimming off any excess white pith, and cut up into 1-inch chunks.
- Put in a medium serving bowl and mix in kiwi and cashews.
- Slightly soften the honey by microwaving for about 10 seconds. Add lime juice and blend well. Pour the honey mixture over the fruit and nuts.
- Garnish with mint leaves and lime zest. Keep refrigerated until ready to serve.
