- Baby or new potatoes
- Olive oil or Earth Balance
- Malt vinegar or rice wine vinegar
- Sea Salt
- Preheat oven to 400 °F.
- Scrub potatoes gently, leaving skins on, then coat with olive oil or Earth Balance.
- Bake for 45–60 minutes or until potatoes are crispy on the outside and fork-tender on the inside.
- Drizzle generously with malt vinegar or rice wine vinegar and sprinkle with sea salt.
