Kale is a cool season green that thrives with a nip of frost - it actually sweetens it. A member of the broccoli family, kale is essentially a form of wild cabbage. Sulforaphane—a compound with antimicrobial, antidiabetic, and anticancer properties is released when it is chopped.
Storage: Wrap loosely in plastic bag in crisper section of fridge. Use within three days.
Preparation: Wash right before use. Cut leaf away from spine—keep “kale bones” for stock.
