Each spiral bud of Romanesco broccoli is composed of a series of smaller buds, all arranged in many series of logarithmic spirals. Also called Roman cauliflower, it is nature's edible version of a fractal. Famous Yale mathematician Benoít B. Mandelbrot (b. 1924) defined fractal geometry using computer graphics to find them in nature. Just like broccoli, Romanesco an excellent source of vitamins, nutrients, and carotenoids. Don’t just contemplate this beautiful, cosmic vegetable—eat it too!
