Ailsa Craig onions are an heirloom variety named after a small granite island off the coast of Scotland. The Ailsa (pronounced "ale-sa") is a sweet onion that is best used fresh. Ailisa is an onion that can be mighty - weighing over a pound, or they can be (as the Scotts say) "wee".
