Roasted Cauliflower “Croutons”

INGREDIENTS

  • 2 cups cauliflower florets, cut into bite-size pieces
  • One tablespoon olive oil
  • ¼ teaspoon salt
  • Pinch of pepper

PREPARATION

  1. Preheat oven to 425°F.
  2. Toss cauliflower with oil, salt, and pepper.
  3. Place on a rimmed baking sheet and roast until lightly browned, about 15 minutes.
  4. Sprinkle over pasta, salads, or whatever sounds good.

Yields 2 cups. Prep time, 5 minutes; cook time, about 15 minutes.
