Warm Quinoa Salad with Winter Vegetables


1 winter squash (such as butternut, acorn, etc.), halved and seeds discarded
3–4 medium beets
1 medium onion, cut into 1-inch dice
4 garlic cloves, peeled
2 tablespoons olive or vegetable oil
1 teaspoon cumin
½ teaspoon salt
4 cups arugula
1 cup quinoa
2 cups water
Olive oil
Salt and pepper to taste
Fresh cilantro for garnish (optional)


Carrot Fritters


2 cups carrots, grated
1/2 cup red onion, minced
4 tablespoons all-purpose flour
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 cup fresh herbs (cilantro, parsley, dill, or basil), minced
3 tablespoons vegetable oil, plus more for frying
1 egg, lightly beaten
Salt and pepper to taste

1 pound red potatoes, scrubbed, cut into 1-inch cubes
1/4 cup whole milk
2 tablespoons unsalted butter
