1 winter squash (such as butternut, acorn, etc.), halved and seeds discarded
3–4 medium beets
1 medium onion, cut into 1-inch dice
4 garlic cloves, peeled
2 tablespoons olive or vegetable oil
1 teaspoon cumin
½ teaspoon salt
4 cups arugula
1 cup quinoa
2 cups water
Olive oil
Salt and pepper to taste
Fresh cilantro for garnish (optional)
