Watermelon Radish

This heirloom Chinese Daikon radish has a colorful surprise inside! Watermelon radishes are crisp with a mild flavor, slightly peppery with lovely sweet notes. They can be eaten raw or cooked, on their own or paired with a wide variety of foods. Average size of watermelon radishes is about 3 inches in diameter, although they vary up and down by an inch or more. Their greens are edible but are a bit rougher than other hearty greens.

Daikon and Carrot Salad

Veggie Stir-Fried Rice

Adapted from Bon Appétit

2¼ cups water
1½ cups long-grain white rice
2 tablespoons vegetable oil
3 eggs, beaten
1 shallot, peeled and minced
2 carrots, peeled, sliced in half, cut into 3-inch pieces and thinly sliced
1 Daikon radish, greens removed, peeled, cut into 3-inch pieces and thinly sliced
1 zucchini, ends removed, cut in half lengthwise, cut into 3-inch pieces and thinly sliced
1 cup mushrooms, thinly sliced
2 tablespoons tamari (soy sauce)
1 tablespoon Mirin (Japanese rice wine)
1½ tablespoons sesame oil
-Wok or large skillet

Overnight Chinese Daikon Radish Pickles

2 daikon radishes, peeled and chopped into 1/4-inch pieces
3/4 teaspoon salt
1 tablespoon rice wine vinegar
1/4 teaspoon black pepper
1/4 teaspoon sesame oil

In a mixing bowl, toss peeled pieces of daikon with salt. Cover and refrigerate until 1 to 2 tablespoons of water are released (about 30 minutes).

Spicy Savoy, Purple Carrot, Kohlrabi and Daikon Radish Slaw

6 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon soy sauce
1 to 2 teaspoons minced fresh serrano chile (including seeds) (optional if you want to spice it up!)
1 teaspoon finely grated peeled fresh ginger
2 teaspoons sesame oil
1 Savoy cabbage, thinly sliced (4 cups)
2 purple carrots, peeled and grated
1 to 2 kohlrabi, peeled and grated
1 Watermelon Daikon radish, peeled and grated


Sweet English Cucumber and Watermelon Daikon Radish Salad

1 English cucumber
1 watermelon daikon radish
1/4 cup cider vinegar
1 1/2 Tablespoons sugar
¼ teaspoon salt
1 Tablespoon olive oil

Peel cucumber, cut it in half lengthwise and slice in 1/4 inch thick half-moon shaped pieces. Scrub the radish, remove last ¼ inch and first ¼ inch. Cut the radish in half lengthwise and slice into ¼ inch thick pieces.
