Dandelion Green Pesto

INGREDIENTS
3/4 bunch dandelion greens, rinsed and stems trimmed
1/2 cup olive oil
2-3 green garlic bulbs, with the tough green leaves and roots cut off
3 tablespoons walnuts, lightly toasted 3/4 tsp sea salt 1 1/4 oz Parmesan or Romano cheese, grated

3 stalks green garlic (green and white parts), chopped
salt to taste
2 slices prosciutto, sliced (optional)
1 bunch swiss chard or mustard greens, chopped
freshly ground black pepper
fresh lemon juice

2 cups potatoes, peeled and diced
1/2 cup onion, chopped
1 green garlic bulb (aka “spring garlic”), minced (or sub 1 clove regular garlic)
1/4 cup butter
1 quart veggie broth
1 teaspoon fresh thyme leaves, finely chopped (optional)
1/4 cup heavy cream
1 teaspoon light green garlic stalks, finely chopped
Salt and pepper to taste

The Wonderful World of Alliums

There is nary a cuisine that doesn’t include allium vegetables. Onions, garlic, leeks, shallots, and scallions are all members of the Allium genus, and are fundamental to so many dishes that cooking without them would be challenging. Although rich in flavor, they seem to disappear in many sauces, stews, and soups, and it can be easy to forget their presence, unless you were the one tearing up while chopping them.

3 cups potatoes, peeled, diced (approx. 3/4-inch), and boiled until just fork-tender
1/2 cup cucumber, diced
1/4 cup finely chopped onion
1 tablespoon green garlic, minced
1/3 cup mayonnaise
1 tablespoon basil fresh, chopped (or 1 teaspoon dried)
2–3 tablespoons plain yogurt
1 tablespoon wine vinegar
1–2 teaspoons of mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Paprika to garnish
