Fall-Flavored Work Lunches

If you go by the number of pumpkin spice products I saw during a recent trip to my local specialty grocery store (rhymes with Hater Moe’s), you’d think that pumpkin, cinnamon, ginger, and nutmeg were the only flavors that herald fall’s arrival.

But as much as you might be craving some pumpkin-flavored cookie butter, fall has other tantalizing tastes to explore. Consider apples, mushrooms, and butternut squash, for example. Here are five easy recipes to add a midday blast of autumn to your lunchbox.

2–3 medium summer squash (such as zucchini, pattypan, crookneck, etc.), sliced into 1/4-inch thick rounds
2–3 tablespoons melted  butter
1/2–3/4 cup fresh basil leaves
Salt to taste

1 lb summer squash, trimmed & cut in 1 inch segments
Salt
2 scallions, cut into fine rounds
½ lb feta cheese
2 tablespoons fresh herbs, chopped
¼ cup extra virgin olive oil
¼ cup fresh lemon juice
