First, cut the avocado vertically around its entire perimeter, separate the two halves by twisting them apart in opposite directions. Score the half without the pit vertically and scoop it out with a spoon. Next, in a fast, hard motion make contact between the middle of the knife and the pit. With the knife partially inserted into the pit, twist the knife and pop out the pit. Now score the inside of the other half vertically and scoop out with a spoon.
