Dragon Fruit

Dragon fruit—an exotic oblate orb with its lovely dragon scales—grows in tropical regions, such as Mexico, Thailand, Vietnam—even Florida. It is known by a variety of names—dragon scale, green dragon, dragon crystal—the blossoms of this vine-like plant bloom at night, which is extra magical.
The exotic dragon fruit looks like a Dale Chihuly sculpture or something from another planet—but it’s from Earth. Fear not the fiery dragon fruit exterior. Just like a Chinese parade dragon, under the fierce exterior is mellow sweetness. The most common varieties are pink- or yellow-skinned.
How to eat: Cut in half and scoop out with a spoon or score in both directions inside of peel and scoop out. Eat alone or add to yogurt or salads.
