- 3 carrots, grated
- 1/2 small onion, diced
- 1 tablespoon olive oil
- 1/2 teaspoon lemon zest, grated (optional)
- 1/2 teaspoon lemon juice
- salt and pepper to taste
- In a bowl, toss the carrots, onion, lemon juice and zest.
- Season with salt and pepper to taste.
