Baked Balsamic Beets

INGREDIENTS

  • 2–3 beets, scrubbed and ends trimmed
  • 3 tablespoons balsamic vinegar
  • Salt and pepper

PREPARATION

  1. Heat oven to 400 °F.
  2. Wrap each beet individually with foil.
  3. Bake until beets are tender (usually between 30 minutes–1 hour depending on size).
  4. When the beets are cool enough to handle, slip off the skins.
  5. Slice the beets and place them in a bowl.
  6. Add the vinegar, salt, and pepper to taste.
  7. Toss to combine, adding a little more vinegar if needed.
  8. Let stand at least 15 minutes before serving.

Serves 2–3. Time: 30 minutes–1 hr.
