Easy Blueberry Chia Seed Pudding

Chia seed pudding topped with blueberries is a powerhouse breakfast packed with fiber, antioxidants, and healthy fats. And it couldn’t be easier to make overnight so it’s ready to enjoy in the morning.

INGREDIENTS
- 1 cup coconut milk
- ¼ cup chia seeds
- 1 tsp cinnamon
- ½ cup fresh blueberries
PREPARATION
- Fill up a mason jar with one cup of coconut milk, 1/4 cup of chia seeds, and cinnamon.
- Stir up the mixture and refrigerate for about 8 hours.
- Stir and top with blueberries.
Serves 1. Prep time, 5 minutes (plus overnight refrigeration)
