Easy Roasted Baby Potatoes

INGREDIENTS

  • Baby or new potatoes
  • Olive oil or Earth Balance
  • Malt vinegar or rice wine vinegar
  • Sea Salt

PREPARATION

  1. Preheat oven to 400 °F.
  2. Scrub potatoes gently, leaving skins on, then coat with olive oil or Earth Balance.
  3. Bake for 45–60 minutes or until potatoes are crispy on the outside and fork-tender on the inside.
  4. Drizzle generously with malt vinegar or rice wine vinegar and sprinkle with sea salt.
  5. Serve and enjoy!

Prep time, 5 minutes; cook time, 45–60 minutes.
