Raw Carrot Onion Salad

INGREDIENTS

  • 3 carrots, grated
  • 1/2 small onion, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon lemon zest, grated (optional)
  • 1/2 teaspoon lemon juice
  • salt and pepper to taste

PREPARATION

  1. In a bowl, toss the carrots, onion, lemon juice and zest.
  2. Season with salt and pepper to taste.
