Apricots are one of the first summer stone fruits to come to market. This is, shall we say, apropos, as a perfectly ripe apricot has the hue of a vibrant summer sunset. Along with their orange-gold coloring, ripe apricots give slightly to the touch and have a sweet, lovely aroma.
