Whole-Wheat Apple Bread

INGREDIENTS

  • 3 cups whole wheat flour (or a combo of wheat and all-purpose flour)
  • 2 ½ cups apple, peeled, cored, and finely chopped or grated
  • 1 cup of vegetable oil
  • 2 cups of sugar
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans or walnuts (optional)

PREPARATION

  1. Preheat oven to 350 °F.
  2. Butter and lightly flour two 8½ x 4 ½-inch loaf pans.
  3. In a large bowl, combine oil, sugar, and eggs.
  4. In a medium bowl, sift together flour, salt, baking soda, and cinnamon.
  5. Slowly add combined dry ingredients to oil mixture, then stir in apples and nuts (if using).
  6. Pour into prepared loaf pans and bake for about an hour or until a toothpick inserted in the middle comes out clean.

Makes 2 loaves. Prep time, 20–25 minutes; cook time, 1 hour.
