Whole-Wheat Apple Bread

INGREDIENTS
- 3 cups whole wheat flour (or a combo of wheat and all-purpose flour)
- 2 ½ cups apple, peeled, cored, and finely chopped or grated
- 1 cup of vegetable oil
- 2 cups of sugar
- 3 eggs, beaten
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1 cup chopped pecans or walnuts (optional)
PREPARATION
- Preheat oven to 350 °F.
- Butter and lightly flour two 8½ x 4 ½-inch loaf pans.
- In a large bowl, combine oil, sugar, and eggs.
- In a medium bowl, sift together flour, salt, baking soda, and cinnamon.
- Slowly add combined dry ingredients to oil mixture, then stir in apples and nuts (if using).
- Pour into prepared loaf pans and bake for about an hour or until a toothpick inserted in the middle comes out clean.
Makes 2 loaves. Prep time, 20–25 minutes; cook time, 1 hour.
