Kohlrabi and Ginger Stir-Fry Recipe

This recipe transforms simple ingredients like kohlrabi, carrots, and bok choy into a delicious meal that’s easy to prepare and brimming with health benefits. Ingredients
- 1 2-inch piece ginger, peeled
- 2 cloves garlic, peeled and minced
- 1/4 cup chicken or vegetable broth
- 2 tablespoons medium-dry Sherry
- 2 teaspoons soy sauce
- 1/2 teaspoon brown sugar
- 1 tablespoon olive oil
- 1/2 teaspoon sesame oil
- 2 purple carrots, peeled and sliced into 1/4-inch discs
- 1 kohlrabi bulb, peeled and thinly sliced
- 2 heads baby bok choy
Preparation
- Prepare the Ginger: Finely julienne half the peeled ginger into thin matchsticks (less than 1/8 inch thick). Grate the remaining ginger and squeeze out about 1 teaspoon of juice. Set the juice and matchsticks aside, discard the pulp.
- Prepare the Vegetables: Clean the bok choy by removing any damaged leaves and trimming the ends. Cut each head into quarters and rinse thoroughly to remove dirt. Dry completely and set aside with the sliced carrots and kohlrabi.
- Make the Sauce: In a small bowl, combine the ginger juice, broth, Sherry, soy sauce, and brown sugar to make a sauce. Whisk until the sugar is dissolved.
- Cook the Stir-Fry: Heat a wok or large saucepan over high heat. Add the olive oil and swirl to coat the pan. Sauté the ginger matchsticks and garlic for about 5 seconds. Reduce the heat to medium, then add the carrots and kohlrabi and stir-fry for 2-3 minutes. Add the bok choy and continue to stir-fry until the leaves wilt slightly, about 1-2 minutes.
- Finish the Dish: Pour the sauce mixture over the vegetables and stir-fry for another 2 minutes until everything is tender but still crisp. Remove from the heat, drizzle with sesame oil, and toss to coat evenly. Serve hot over a bed of fluffy jasmine rice.
