Roasted Cauliflower “Croutons”

INGREDIENTS
- 2 cups cauliflower florets, cut into bite-size pieces
- One tablespoon olive oil
- ¼ teaspoon salt
- Pinch of pepper
PREPARATION
- Preheat oven to 425°F.
- Toss cauliflower with oil, salt, and pepper.
- Place on a rimmed baking sheet and roast until lightly browned, about 15 minutes.
- Sprinkle over pasta, salads, or whatever sounds good.
Yields 2 cups. Prep time, 5 minutes; cook time, about 15 minutes.
