Smothered Yellow Squash with Basil

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 1/2 medium yellow squash, halved lengthwise and cut into 1/8-inch thick slices
  • 2 cloves garlic, minced
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped basil

PREPARATION

  1. In a heavy skillet set over medium-high heat, cook the squash in two stages by sautéing one half of the squash in one tablespoon oil for 5 minutes, until browned.
  2. Transfer the squash to a bowl. Heat the remaining tablespoon olive oil in the skillet and repeat the process with the second half of the squash.
  3. Return all the squash to the skillet and add the garlic, sautéing for an additional 2 minutes.
  4. Add the water, salt, and pepper and simmer until the squash is tender and most of the liquid has evaporated, about 6–7 minutes.
  5. Stir in basil and serve.

Serves 2. Prep time, 5 minutes; cook time, 15 minutes.
