Sweet Peach and Blueberry Crumble

This peach and blueberry crumble is sure to make you the star of the next barbecue or office potluck you attend. It’s best in the late spring and summer, when both peaches and blueberries are ripe, juicy, and in season.

Ingredients

For the Filling

  • 6–8 fresh ripe peaches, peeled and sliced into ½-inch chunks
  • ½ pint blueberries
  • 2 tablespoons lemon juice
  • Sugar, to taste (optional)
  • ¼ cup flour

For the Crumb Topping

  • ¾ cup sugar
  • ¾ cup flour
  • ⅓ cup butter, softened at room temperature

Preparation

  1. Make the Fruit Filling: In a bowl, combine the peach chunks and blueberries, then add the lemon juice and toss to combine.
  2. Taste Test: Taste the fruit mixture. If the peaches seem underripe or not as sweet as you’d like, add sugar to taste. Keep in mind that the crumb topping will add sweetness.
  3. Flour the Fruit: Add the flour to the fruit mixture and toss to combine. Let the fruit rest for 5 minutes.
  4. Fill the Baking Dish: Transfer the rested fruit to an 8 x 8-inch baking dish.
  5. Make the Crumb Topping: Cut the softened butter into pieces, then use a fork to blend the crumb topping ingredients together until they have a lumpy texture.
  6. Top the Dish: Spread the crumb topping evenly over the filling in the baking dish.
  7. Bake: Bake at 350°F for 55 minutes.
  8. Cool and Enjoy: Let the peach and blueberry crumble cool for a bit, then serve it alone or topped with whipped cream or vanilla ice cream.

Serves 9 generously. Prep time, 20 minutes; cook time, 55 minutes.

Cook’s Note
