Easy Mango-Orange Fruit Popsicles

I live in New York City where the summers are very hot and humid, so my top priority is finding ways to cool off. When I was a kid, my family stayed cool during 90-degree days by heading to the park and playing in the sprinklers. Afterward, we bought ICEEs from a local vendor who sold them from tubs in a rolling fridge cart.

Now, as an adult, I like to recreate my childhood joys. I recently came across a popsicle mold while shopping and had a brilliant idea: I can create fruit popsicles with the bounty in my FruitGuys employee fruit box all summer!

I grabbed the molds, took them home, and got to work. The fresh mangoes and oranges in my box turned into fruit popsicles so wonderful and refreshing that I had to share the recipe with you.

You can make these popsicles with any fruits and herbs you’d like. The herb-free Mango-Orange is my favorite combination, but I think Peach-Mint-Strawberry and Kiwi-Strawberry would be great, too.

Easy Mango-Orange Fruit Popsicles

MATERIALS

  • Cutting board
  • Knife
  • Blender
  • Spoon
  • Popsicle mold
  • Popsicle sticks (may be included in your mold)

INGREDIENTS

  • 3 ripe mangoes
  • 2 ripe medium-sized oranges
  • 2 tablespoons (can substitute agave or brown sugar)
  • 1 tablespoon chia seeds (optional)

PREPARATION

  1. Remove the skin and seeds/pits from your fruit.
  2. In a blender, combine your fruit, sweetener, and chia seeds. Blend until smooth.
  3. Spoon puree into your popsicle molds, leaving a little room at the top for the puree to expand as it freezes.
  4. Insert popsicle sticks into each mold.
  5. Freeze your popsicles for 6 hours or overnight, then pop them out of the molds and enjoy!

Serves 10. Prep time, 10 minutes; freeze time, 6 hours.

Cook’s note: Get creative with your ingredients to make the perfect popsicles for you. Try swapping in peaches, strawberries, or kiwis for the mangoes; using lemons or limes instead of oranges; and adding fresh herbs like mint.

Making these fruit popsicles felt like recreating one of my childhood memories. I hope you find as much enjoyment in them as I do.
