Simple Grilled Peach and Burrata Salad

This summer salad starring creamy burrata and grilled peaches is light and satisfying, with a sweet-tart note from the balsamic dressing and a nice crunch from the almonds and pumpkin seeds. Grilling the peaches makes them extra-sweet, so our grilled peach and burrata salad recipe works particularly well for small, early-season peaches.

Ingredients

For the Salad
- 4 handfuls spring mix
- 2 peaches, halved and pitted
- 2 tablespoons pumpkin seeds
- 2 tablespoons sliced almonds
- 2 teaspoons soft burrata interior
- 2 teaspoons firm burrata exterior, torn into chunks
- Fresh mint leaves, to taste (optional)
For the Dressing
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil, plus more for brushing peaches
- 1 teaspoon honey
- ⅛ teaspoon salt
- ⅛ teaspoon pepper

Preparation
- Heat the Grill: Heat your grill to 375°F or medium-high.
- Prepare the Peaches: Brush cut halves with olive oil.
- Grill the Peaches: Place peaches cut side down on the grill and cook for 5 minutes.
- Make the Dressing: While the peaches cook, combine the balsamic vinegar, olive oil, honey, salt, and pepper in a small bowl and mix together with a fork.

- Cool the Peaches: Remove peaches from the grill and let cool slightly.
- Prepare the Greens: Divide the mix between two plates or bowls.
- Add Toppings: Divide pumpkin seeds, almonds, burrata, and grilled peaches evenly between the two salads.
- Dress and Enjoy: Drizzle each salad with 1 tablespoon dressing and sprinkle with mint leaves (if using), then serve and enjoy!

Cook’s Notes
- Choose peaches that are still firm, not fully ripe. They’ll hold together better on the grill.
- If you’re making this salad in the office, skip the grilling step and slice raw peaches over your salad. The result will be slightly more tart, but just as delicious!
- To make this recipe even easier, look for small single-serving rounds of burrata. Add one to each salad instead of cutting into a larger round.
- Leftover dressing will keep in the fridge for 4–5 days.
