The Inside Scoop on Shipping Fresh Fruit: How We Keep It Safe and Bruise-Free

Shipping fresh fruit is a little bit like carrying a baby across an obstacle course—you have to take every step with care. Here at The FruitGuys, we’ve been experts at tackling that course since 1998. That’s the year founder Chris Mittelstaedt made our very first fruit delivery to an office in San Francisco.

Today, we ship fresh fruit to businesses, schools, and homes nationwide and use a variety of strategies to keep it fresh and bruise-free on the way to you. To give you the inside scoop on how we do it, we chatted with Operations Manager Nicole Wagner, who oversees The FruitGuys’ fruit packing facilities in San Francisco and Los Angeles.

She said there are five “secrets” to shipping fresh fruit that arrives delicious and ready to eat.

Secret #1: Choose the Right Fruit

The FruitGuys keeps things old-school on our production line: Humans inspect every piece of fruit, and only the very best-quality pieces make it into our boxes. We donate or compost the rest to keep our facilities free of food waste.

“There are so many things a person can see and feel on a piece of fruit that a machine just can’t pick up on,” Nicole explained. “For example, someone can look at a pear and know whether marks on the skin are harmless scarring from growing against a branch or a sign of decay.”

Secret #2: Pack by Hand

After inspection, the next step is packing, and that’s always done by hand.

“As boxes move down the line, our team hand-selects every piece of fruit, carefully inspecting it for quality before placing it inside. It’s a hands-on process, with a strong focus on quality, care, and making sure every box looks as good as it tastes,” Nicole said.

She explained that sometimes, actually feeling the fruit (with gloves on, of course) can be key to judging its ripeness. That ideal feel differs from variety to variety.

“Our team knows the difference between a Satsuma tangerine, which naturally has looser, puffier skin, and a Pixie tangerine, which should be firmer. That level of attention to detail is something only human hands can provide, and it makes a real difference in the quality of the fruit our customers receive,” she said.

Secret #3: Pad Like a Pro

We’ve tested many different kinds of padding to find the best combination of cushions for shipping fresh fruit. The exact strategy we use varies by box size and type.

“For our large 50-serving boxes, we use trays to separate the two layers of fruit so nothing is sitting directly on top of each other. We also use partitions to prevent fruit from rubbing together, along with some added cushioning,” Nicole explained.

Bananas get even more protection because they’re so delicate and temperature-sensitive. With the right wrapping, we can make sure they arrive at the ideal “stage five” ripeness level.

Secret #4: Be in the Neighborhood

This secret is pretty simple: The FruitGuys has facilities across the country to make sure that when we’re shipping fresh fruit, it never has to travel far to reach our customers. Whether your office is located in Seattle, Atlanta, or Chicago, we have a facility nearby. That proximity helps the fruit arrive in great condition—just the way it was when we packed it.

Secret #5: Deliver with Care

We partner with several couriers across the country to get fruit from our facility to your break room or kitchen as quickly as possible. Often, that means our team is up before dawn to pack boxes for our partners to pick up at daybreak.

“Our couriers pick up orders early in the morning and head straight out for deliveries,” Nicole said. “The goal is always the same: Get our customers the best-quality fruit with as little travel time as possible.”
