Pumpkin Cookies

Recipe by Delilah’s Farm for The FruitGuys INGREDIENTS 1 1/2 cups flour 1 teaspoon baking powder 1 teaspoon cinnamon 1/4 teaspoon powdered ginger Pinch of nutmeg Pinch of salt 1 stick butter or margarine, at room temperature 1/2 cup brown sugar, firmly packed 1 egg 3/4 cup pumpkin, roasted and pureed 1/2 cup raisins (optional, but really good in these cookies) PREPARATION Preheat oven to 375°F, and whisk together dry ingredients. Set aside. With an electric mixer, cream together butter and sugar. Add egg and beat until thoroughly blended. Add pumpkin and beat until thoroughly blended. On low speed, mix in flour until just blended. Do not over mix. On a parchment-lined baking sheet, drop rounded tablespoons of dough 1 1/2 inches apart. Bake until cookie tops spring back when touched, about 15 minutes. Makes about 2 dozen cookies. Prep time, 15–20 minutes; cook time, 15 minutes. Cook’s note: Serve cookies plain or glazed with powdered sugar dissolved with just enough orange juice for a maple syrup-like consistency. Drizzle over the cookies.
